Instructions
  1. Combine crushed tomatoes, chicken stock, & basil in a medium saucepan over medium heat.
  2. When soup begins to boil add in heavy cream and stir well to combine.
  3. Stir in salt & pepper to taste and let simmer for 15 minutes.
  4. Let soup cool and then puree.
  5. Pour soup puree into oven safe container 3/4 full.
  6. Butter one side of the toast and cut into 'croutons'.
  7. Place croutons on top of soup with the butter side up.
  8. Completely cover the bread and the entire top of the soup with the cheddar cheese.
  9. Bake for 20 minutes until the cheese edges are brown and bubbly. For extra crisp, broil for 2-4 minutes.
