Ingredients
- 1/2 cup butter (room temp)
- 1/2 cup packed brown sugar
- 1/2 cup molasses
- 1 egg, separated
- 2 1/2 cups flour
- 1 tbsp ground ginger
- 1 tsp all spice
- 1 tsp baking soda
- 1 cup icing sugar
- 8-10 drops food colouring

Instructions
- preheat oven to 350, grease cookie sheet
- beat the butter & sugar together until light and creamy. Add molasses and egg yolk and beat until combined.
- mix flour, ground ginger, all spice and baking soda in a separate bowl
- add flour mixture to butter mixture and stir until mixed.
- knead dough until smooth. cover with wrap and put in the fridge for 30 minutes.
- meanwhile, beat egg white in clean bowl until stiff peaks form. divide for each colour.
- once chilled, roll dough and cut out shapes.
- bake for 10 mins. cool, decorate & serve.
