  1. Heat the oil in a skillet over medium-high heat
  2. Add the onion and sautyƩ for 3 minutes
  3. Add the chicken and cook until brown on all sides, about 3 minutes
  4. Add the rice and 1 cup of water and stir occasionally until it reduces a bit, about 10 minutes.
  5. Add the remaining 1 cup water and continue cooking, stirring occasionally, until the rice is tender, about 25 minutes.
  6. Remove from the heat and stir in the basil and Parmesan cheese. Cover and let stand for 5 minutes.
  7. Dice into small pieces if required.
