Comfort Food – Spinach Artichoke Pesto Pizza

Winter Warming

I am always a few weeks late on putting on my winter padding.  It takes some good, warm, comfort food to warm up these toes.  With temperatures well below zero throughout the winer I have become the Queen of Comfort Foods.  My masterpieces include an array of pastas, pizzas, stews, soups to casseroles!  Nearly half of my recipes were actually stolen from the real Queens (enter Grandma, Auntie, Mama, Sister and Weelicious among others).  To start this season off right I decided to share one of the recipes that I actually didn’t have to steal.

Spinach Artichoke Pesto Pizza

Ingredients:

  • 1 pizza crust (I eat gluten free)
  • 1/2 cup pesto (good recipe HERE)
  • 1/2 cup chopped spinach
  • 3/4 cup chopped artichoke hearts
  • thinly sliced pepperoni
  • 3/4 cup mozza
  • pinch of parm

Directions:

Preheat oven to 400.  Spread the pesto over the pizza crust.  Add the spinach & artichoke hearts.  Sprinkle with cheeses and then add the pepperoni.  Bake for 10-15 minutes (if store bought crust bake according to their instructions).  Cool, slice and enjoy!!
