Comfort Food Recipe – Italian Tortellini Soup

I had the absolute privilege to live with my in-laws for the first year of my marriage (I know rare thing).  One of many things that my Mother-In Law (Mog- Mother of Gibb) taught me was to refine my non-existant cooking skills.  The whole family refers to her as the soup queen and this is one of my favorites.  Whenever I eat it, it reminds me of my very caring Mother-In-Law, who shows her love through food 🙂

Mog’s Italian Tortellini Soup
  • 1 lb Italian sausage
  • 1 cup coarsely copped onions
  • 2 garlic cloves, sliced
  • 5 cups beef broth
  • 1/2 cup water
  • 1/2 cup dry red wine or water
  • 2 cups (4 medium) chopped, seeded, peeled tomatoes
  • 1 cup thinly sliced carrots
  • 1/2 tsp basil leaves
  • 1/2 tsp oregano leaves
  • 8 oz/ 213 ml cal tomato sauce
  • 1 1/2 cups sliced zucchini
  • 2 cups frozen tortellini
  • 3 tbsp chopped fresh parsley
  • 1 medium green pepper cut into 1/2 inch pieces
  • Grated Parmesan and/or Mozzerella

Brown sausage meat in soup pot; reserve 1 tbsp drippings.  Set browned meat aside.  Saute onions and garlic in reserved drippings until onions are tender.  Add beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce and sausage.  Bring to boil, reduce heat; simmer uncovered 30 minutes.  Skim fat from soup.  Stir in zucchini tortellini, parsley, and green pepper.  Simmer, covered, an additional 35-40 minutes or until tortellini are tender.  Top with Parmesan cheese and Mozzerella.  makes 8 servings.

If you batch cook, do not add tortellini’s until you are reheating it.
